Art. 2 UCP 600 defines Presentation to mean either the delivery of documents under a credit to the issuing bank or nominated bank or the documents so delivered. The last part " the documents so deliivered" is not clearly understood. Whether documents by themselves become the act of presentation.

Could someone clarify, please?

The reference to "the documents so delivered" is to emphasize that the nominated bank is under no obligation to determine whether or not all the documents have been presented, prior to the actual commencement of their review.

Coming down to that:
If the beneficiary presents some of the documents but not all, informing the bank that the rest of the documents will be presented in a few days. When does the checking must start? On receipt of the documents so delivered or when all documents have been presented?

As far as I understand this is to say that there are two definitions of what a “presentation” is:

1) either the physical delivery of the documents, or
2) the documents that has been delivered (and are on the table in front of the document examiner).

Point 2 represents “the documents so delivered” see e.g.

10(c): “…If the beneficiary fails to give such notification, a PRESENTATION that complies with the credit ..”

In this sub- article “presentation” does not mean the physical delivery of the documents – but the document that have been presented and examined.

The Comparison of UCP 600 and UCP 500 by Professor James E. Byrne provides the following in the "Comments" section (points 1 & 7) in relation to article 2 definition of "presentation":

1) Generally. The definition of "Presentation" in UCP 600 Article 2 (Definitions) recognizes that the concept of pesentation can be used as a noun describing actual documents or as a verb signifying the act of delivering documents, reflecting the duality of usage in LC Practice.

7) Documents so Delivered. UCP 600 article 2 para 13 "Presentation" also includes the documents delivered. In this sense, one could say "I have examined the presentation"
